My first memory of mint was picking wild spearmint as a young child on the banks of the Llano River at my great-aunt’s cabin. Mint is probably themes carefree herb to grow and is perfect for a beginner (or a seasoned grower!). In fact, mint is best planted in its own container so it doesn’t take over a garden and will easily come back year after year (I’m not using the word “invasive” here ;) ). My favorite mint for flower arranging is apple mint and variegated apple mint; my favorite for cooking and using in beverages is mojito mint (which can also be used in arrangements). I’m a sucker for trying new varieties–from grapefruit, to orange, to chocolate, there are numerous mints to try and numerous varieties growing on our farm! They smell so good in a bouquet! As the temperatures start to increase, mint may try to wilt when cut. Just dip in boiling water for a few seconds then place indoors in a cool bucket of water and let sit for a few hours.
